A unique African-Scandinavian fusion sauce blending the warm, spiced flavors of Africa with the fresh, aromatic notes of Scandinavia. Perfect for grilled meats, roasted vegetables, or as a dip, it offers a creamy, tangy, and slightly spicy experience.

Ingredients:

  • African base
    • 2 tablespoons natural peanut butter (for a creamy, rich texture)
    • 1 teaspoon harissa (for a spicy kick)
    • 1 teaspoon tamarind juice (for balanced acidity)
    • 1 garlic clove, minced
    • 1 teaspoon honey or date syrup
  • Scandinavian influence
    • 100 ml sour cream or Greek yogurt
    • 1 teaspoon Dijon mustard (commonly used in Scandinavia)
    • 1 teaspoon fresh dill, chopped
    • A pinch of juniper berry powder (for a balsamic, woody note)
    • Smoked salt, to taste
  • Extras
    • 1 tablespoon sunflower oil or rapeseed oil (neutral)
    • 2 teaspoons cold water (if needed to adjust the consistency)

Instructions:

  1. Prepare the African base:
    In a bowl, mix the peanut butter, harissa, tamarind juice, minced garlic, and honey. Stir until smooth and creamy.
  2. Add the Scandinavian element:
    Incorporate the sour cream, Dijon mustard, and fresh dill. Mix well until the sauce becomes homogeneous.
  3. Balance the flavors:
    Add a pinch of juniper berry powder and adjust with smoked salt. If the sauce is too thick, thin it out with a bit of cold water.
