Lemon and Turmeric Mayonnaise

This mayonnaise has a fresh and spicy flavor, with a golden and inviting color thanks to the turmeric.

Ingredients:

  • 1 fresh whole egg (at room temperature)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon garlic powder (optional, for a bolder flavor)
  • 200 ml sunflower oil (or another neutral-flavored oil)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the base:
    • In a tall, narrow container (ideal for an immersion blender), crack the whole egg.
    • Add the mustard, lemon juice, apple cider vinegar, turmeric, garlic powder (if used), a pinch of salt, and a dash of black pepper.
  2. Blend the mayonnaise:
    • Place the immersion blender in the container, resting it at the bottom.
    • Slowly pour the oil over the ingredients. It’s important that the oil stays on top.
    • Turn on the immersion blender, keeping it stationary at the bottom until the ingredients begin to emulsify.
    • Slowly lift the blender as the mayonnaise thickens.
  3. Adjust the flavor:
    • Taste and adjust with more salt, pepper, or lemon juice, if needed.
  4. Serve or store:
    • The mayonnaise can be used immediately or stored in an airtight container in the refrigerator for up to 3-4 days.

Tips:

  • You can further personalize this mayonnaise by adding a pinch of smoked paprika or a drizzle of toasted sesame oil for a more complex flavor.
  • This mayonnaise pairs perfectly with fries, raw or grilled vegetables, or as a base for gourmet sandwiches.
